Falk's favorite thing was patting down the dense dough with the cool flour. This had been his morning, every morning, for a very long time. He liked how the dough responded to how much you took care of it. With a lot of care and love, the dough became a nice and soft loaf, airy and sweet. Not everyone liked those, of course, because lighter bread meant less filling bread. But at least one batch of rolls - usually the sourdough, since those were his favorite - Falk indulged and made a little fluffier. Just for himself and the few customers who appreciated his specialty.
